Brown Butter Garlic Cauliflower Foil Packets

1 cauliflower head, broken down into florets and rinsed

5 cloves garlic, grated

1 or 2 teaspoons dried garlic, optional

1 or 2 teaspoons dried oregano

Salt and fresh cracked pepper

1/3 cup brown butter or ghee

Fresh chopped parsley

Fresh thyme leaves

Crushed red chili pepper flakes, optional

Directions

1. Preheat your oven 400°F (200°C).

2. Cut 4 sheets of foil, about 15-inches (40cm) long. Divide cauliflower florets into 4 equal portions and arrange to the center of each foil.

3. Slightly fold up the sides of each foil packet. Add grated garlic, oregano, thyme and salt and pepper, to taste. Pour browned butter over cauliflower and gently toss to combine. Fold the sides of the foil over the cauliflower florets, covering completely and sealing the packets closed.

4. Place foil packets on a rimmed baking sheet and bake until cooked through, about 15-20 minutes.

5. Serve immediately, garnished with red crushed chili pepper, fresh parsley, fresh thyme, and more brown butter, if desired.
